Dear Cannelés, I love you

Today I went for a long bike ride around the city and stopped at the park, some favourite stores, Kensington Market and also, back to Nadège! This time I had an amazing chocolate and hazelnut 3 boule cake and it was very nice but what blew my socks off were the cannelés. For the life of me I can't recall why I've never kicked up a fuss about these before – maybe I've never had such good ones – but these are remarkable. They are the perfect balance of chewy, fluffy, soft, cakey, custardy, caramelized, toasty goodness. They sell mini versions in sets of three which is a very good thing because it makes them seem more precious. Otherwise, I would be inclined to buy them by the dozens and eat them like popcorn if it weren't so gauche.  ;-)
